Lamb Shank Strips in Red Sauce with Egg Noodles

The other day I went to the butcher shop and picked up some Lamb Shank Steaks. I had some multi coloured carrots, and I was in the mood of a sauce. I put together this amazing combination which turned out so good I had to share!

Ingredients

  • 2 lamb shank steaks (cut in strips)
  • 1 small onion
  • 3 garlic cloves
  • 4 coloured carrots
  • A hand full of Fresh chives
  • 1 garden tomato
  • 1 cup strained tomato sauce
  • 1/2 cup water
  • 4 tbsp olive oil
  • 1/2 tsp sriracha lime seasoning
  • Pinch of salt
  • Pinch of ground pepper
  • Choice of egg noodles (I’m using Tagliatelles you can use pasta, or rice)
  • Grated Pecorino or Parmesan for topping
  • Prepare all the ingredients in advance, I like to do this because it makes the cooking process easier.
  • Clean garlic, onion, and chives finely chop. Set aside. Dice tomato set aside.Cut meat in strips set aside. Clean and chop carrots set aside.
  • Cook your choice of Noodles or Pasta set aside.
  • In a deep sauce pan, heat olive oil on medium high, add onions, garlic, chives sauté till translucide, add lamb strips, cook till browned on all sides. Add chopped carrots, and spices, sauté all together once carrots are tender, add diced tomatoes, tomato sauce, and water. Let cook on medium low heat for approximately, 1 hour, stir occasionally, if needed add more water, the lamb needs to cook till tender! Once texture of meat is satisfactory reduce to low and continue to cook till liquid has evaporated.
  • Mix in Tagliatelles, cover and let sit 5 minutes before serving. Top with cheese.
